Roasting, winnowing, precision milling, and conching are conducted in our Montreal workshop under strict Quebec food safety and hygiene regulations. Every product is sealed in airtight packaging to guarantee optimal freshness.

Raw beans are fermented and sun-dried, ideal for bean-to-bar chocolatiers wishing to define their own roast profiles. Roasted beans are precision-roasted in our Montreal workshop to develop warm notes of roasted nuts and deep cocoa, ready for snacking, winnowing, or milling.

Store them in a cool, dry place (ideally between 14°C and 18°C / 57°F and 64°F) away from direct sunlight and ambient odors. Properly kept in their original sealed airtight packaging, pure cocoa butter and 100% cocoa mass maintain optimal shelf life for up to 24 months.
